SWEET SPICE, SUBTLE OAK AND FINE TANNIN". Oak is selected from the elevated ridges of the Minnesota Lakes District. Average Rainfall – 990 mm pa. Elevation average – 450 metres. Oak Seasoned at mill for 36 months receiving an annual precipitation of 1000 mm pa including snow prior to shipment to our Cooperage – Barossa Valley, South Australia. The oak then spends another 4 – 6 months in our seasoning yard to acclimatise the oak prior to manufacturing. And underlying subtle seasoned oak.

Capacity /- 2.5L. Head Diameter /- 5mm. 675mm (26 3/8¨). American Oak: A maximum 10.5% moisture content is maintained throughout manufacture. With the hot and dry Barossa Valley summers, the moisture content must be held below that used by Northern Hemisphere cooperages. This lower moisture content ensures minimal shrinkage and exceptional sealing properties resulting in negligible barrel leakage. Oak dimensions: All dimensions are at final size after fabrication.

Today the business is managed by fourth generation master cooper Peter John – great-grandson of the company founder.
