I’ve been slacking off on eating fruit for a few days, so I decided to put on my mad scientist goggles and do another smoothie experiment. I’m too lazy to make a shopping trip just for smoothie fruit, so I used what I had laying around. There wasn’t much. Don’t get discouraged though! This turned out superb! Sometimes less really is more. A splash of orange juice to finish off the bottle.

Wednesday, January 12, 2011. Chocolate Chip Pecan Cookies. I'm actually very happy with the way they came out. I tend to like crunchy cookies over super soft and these were crunchy but a little soft on the inside. They didn't drop as much as I would have liked so I think I will flatten them down more next time before putting them in the oven. Chocolate Chip Pecan Cookies. 2 cups all purpose flour. 2 tsp baking powder. 1/2 cup cane sugar. 1/2 cup Earth Balance melted and cooled. Preheat oven to 350 degrees.

Yep you read that right…I can’t believe how in only one week by changing our lifestyles how much better we feel! 2 ripe bananas (mushed up). 1 apple (cored, peeled and diced). 1/2 cup apple sauce (can use flavored but I chose Roundy’s All Natural). 1 teaspoon baking soda.
