I catered a party for 30 people this weekend for a friend with Celiac Disease. She needed someone she can trust to cater the party to ensure she got a gluten-free meal. This experience taught me Lesson #1 of this no-impact challenge: One must plan ahead thoroughly to be successful. I just did not have time to go find 30 used, matching coffee mugs and 8 matching dressing boats....
