May 4, 2012. Everything But the Kitchen Sink Banana Bread. Posted by katecooks under Uncategorized. Every single time I bake banana bread, I wind up using a new recipe. This time, I only had two bananas, so I added pumpkin in lieu of a third. From there, I made it up as I went along…brown sugar, walnuts and even espresso made it into the batter. The only thing missing was chocolate chips — otherwise, this recipe is definitely a keeper! 2 large ripe bananas, mashed. 1/3 cup melted butter. 1 egg, beaten.

Chicken Cannelloni with Panzanella Salad. This is one of my new favorite dinners, it’s so easy, and it is absolutely delicious! It’s also really fun to make…you get to use your hands, which always makes me feel like I’m a little kid playing with my food. Plus, there are so many bright, robust flavors in this show-stopper stuffed pasta, and the cool salad on the side is a nice change-up to the traditional garden salad. I promise that you’ll love it!
