Andrew's adventures in home cheese making. June 15, 2008. Horseradish Cheddar and Jalapeno Cheddar. The plan was to press both at once (I only have one press, after all). However, we quickly realized that both of these are rather pungent, and that the flavors would likely combine inside the press (even if they're separated by some cheesecloth). We wanted to avoid making a Horseradish Cheddar that tasted like Jalapenos, and vice versa. Even we're not that adventurous! 1 Packet Direct Set Mesophilic Starter.

Cheese making adventures in Brooklyn, NY. Monday, July 30, 2012. Cheesemaking in Ticino, Switzerland. Now it was time to prepare the hoops. Earlier she had shown me the hoops and how they work. The ones she used were made of plastic and are much easier to adjust t. Han the wooden ones. On other days she would have started to make ricotta now, but this was skipped. Because it was Sunday.
