Saturday, September 1, 2012. Peach Cobbler Cupcakes . Take 1. And that turned out wonderful . so Peach Cobbler was my next adventure. Up first . baking the peaches inside. The peach filling will be a later post. I searched all kinds of recipes on-line, and I finally found one that I could tweak a bit at Willow Bird Baking. Here's what I did . 3/8 cup light brown sugar. 3/8 cup white sugar. 2 large eggs, room temperature. Splash of peach syrup from canned peaches (if using canned peaches). 1 1/3 cup flour.

Sunday, March 18, 2012. Bailey's Irish Cream Cupcakes. Yesterday was St. Patrick's Day. I made the mistake of being in Chicago yesterday. If you've never had this experience, let me just say don't do it. It was CRAZY. I decided that I really hate drunk green people. Even though I was away from home, I still found time to make some special treats for the day. For the adults, I made these Bailey's Irish Cream Cupcakes. I got the recipe from TidyMom. And let me just say that they were absolutely amazing.

I used the ready-made fondant because it's a lot more sturdy than my marshmallow fondant. I tinted a bunch of it yellow, rolled it out and, using a round fondant cutter, cut a bunch of circles.
