Tuesday, May 21, 2013. Last Day of Preschool. Ever. Yesterday was David's last day of preschool. And the last day I will ever have a preschooler. It was a tough day for this Mama. But it was a good day for David, to end a good year of school. At the end of last year, he was released from the Early Childhood program at our school, because his speech had improved so much! I am a huge fan of Noodles and Company's Pasta Fresca - penne pasta sauteed with roma tomatoes, baby spinach and a light balsamic sauce, topped with a bit of freshly grated Parmesan. Mmmmmm. The dish seemed simple enough to try to re-create at home, but my attempts just weren't working. I got online and found the actual recipe. With instructions and made it for dinner the other night. Everyone gobbled it up! And not a hint of cream soup in it anywhere! Links to this post.
