love my pumpkins: Silken tofu chocolate chip cookies
http://www.lovemypumpkins.com/2012/06/silken-tofu-chocolate-chip-cookies.html
Tuesday, June 12, 2012. Silken tofu chocolate chip cookies. Silken tofu chocolate chip cookies. 1/3 c Earth Balance. 6 oz silken tofu. 3/4 cup sucanat (or other granulated sweetener). 1 c whole wheat flour. 1/2 t baking soda. 1/2 t sea salt. 3/4 c chocolate chips. These are super soft from the tofu and have just the right amount of sweetness. The kids love them and I don't feel guilty letting them eat a few. :). June 17, 2012 at 5:29 PM. love my pumpkins: December 2011
http://www.lovemypumpkins.com/2011_12_01_archive.html
Thursday, December 22, 2011. The other day, while the kids were napping, there was only thing holding me back from making some serious progress on my mile long to-do list. Thoughts of no-bake cookies consumed my mind. The problem was I was completely out of oatmeal. This wasn't reason enough to give up. I've been pretty obsessed with quinoa lately, mostly for breakfast. Since quinoa has so gracefully taken the place of oatmeal in my life lately, I figured it might make an acceptable substitute. Okay, so ...

love my pumpkins: Buffalo Sweet Potato Fries
http://www.lovemypumpkins.com/2012/05/buffalo-sweet-potato-fries.html
Thursday, May 17, 2012. Buffalo Sweet Potato Fries. I ran 11 miles this afternoon. Afterward I managed to stand just long enough to make dinner; then I crashed and have been lounging ever since. My legs aren't really giving me a choice at this point. Here's what I did:. I used one (really). Large sweet potato. The thinner the cut, the quicker they cook and the crispier they get. It's late so I'm going to attempt to crawl to my bed. :). Subscribe to: Post Comments (Atom). View my complete profile. Friday ...

love my pumpkins: March 2012
http://www.lovemypumpkins.com/2012_03_01_archive.html
Wednesday, March 28, 2012. You know the people who get done eating and claim they absolutely have NO room for dessert? What is wrong with these people? One of my favorite healthy dessert blogs is Chocolate Covered Katie. My sister introduced me to an amazing one minute chocolate cake recipe. Links to this post. Monday, March 26, 2012. Last month some friends and I took a veggie sushi class. At a local natural food co-op. It only cost $15, which was completely worth it considering we ate everything we...

love my pumpkins: Cookie dough balls
http://www.lovemypumpkins.com/2012/05/cookie-dough-balls.html
Friday, May 4, 2012. So simple, yet so much depth. The following recipe includes some of my favorite ingredients. I wrote it down just for you people. :). 1/2 cup rolled oats. 1/2 cup raw almonds. 1 T nutritional yeast. 1/4 cup unsweetened coconut. 1/4 cup maple syrup. 2 T dark chocolate chips. Process the almonds, oats and nutritional yeast just until well ground. If you do it too long, it will start bringing out the oil from the nuts.). Add cocoa, sucanat, and vanilla and process once again. May 7, 201...

love my pumpkins: January 2012
http://www.lovemypumpkins.com/2012_01_01_archive.html
Monday, January 30, 2012. This mild weather has once again got me thinking about summer. I tell my students they are crazy when they declare a heat wave and bare their arms at recess the very moment the temperature creeps over freezing, but I would be lying if I said the thought of flip flops and coconut-scented sunscreen doesn't flood my mind on days like these. Another thing I miss about summer? The best things about roasted vegetables. 1 Whatever combination you choose is always amazing. Trust me.

love my pumpkins: October 2012
http://www.lovemypumpkins.com/2012_10_01_archive.html
Sunday, October 7, 2012. Yes, I know it has been a long time. I have been busy, so give me a break! Even though I have not been posting, I still have been busy creating. There is a pile of recipes in my kitchen waiting to make the cut, so I am going to try to make up for the last couple of months. This past weekend it finally felt like fall. I traveled with a group of friends to Des Moines for The Color Run. We had an amazing time, but it was freezing! Just because I needed a little taste of summer.

love my pumpkins: April 2012
http://www.lovemypumpkins.com/2012_04_01_archive.html
Wednesday, April 25, 2012. I have never been a doughnut person. In general, I am not a fan of anything overly sweet in the morning. Or even more so, anything that has been bathed in grease. These healthier doughnuts have made me reconsider this popular breakfast choice. The fact that they are baked and not loaded with sugar and enriched flour makes a huge difference. No gut rot. I even ate two of them immediately preceding Combat. And had an amazing workout! From Jessica Seinfeld's Deceptively Delicious.
