Kickin' Into Keto: June 2012
http://www.ketoblog.net/2012_06_01_archive.html
Friday, June 8, 2012. Flavors from the east. I haven't tried to do a whole lot with Asian food, so this month I'm trying a few different things. Spicy Thai food was my favorite delivery food pre-Keto. This dish had a great flavor and bok choy done at home is so nice and crisp. wish I'd started making curries at home sooner! The net carbs on this was 17g each, but we've both gotten to the point where we can easily stay in Keto at 80g of carbs (although we rarely if ever go that high! Eight baby bok choy.

Kickin' Into Keto: March 2013
http://www.ketoblog.net/2013_03_01_archive.html
Thursday, March 14, 2013. I've made this almost once a month for the last year, and just realized for the first time, I never added it to the blog. I altered it so it could be used in our new meal plan. For dinner, we split it into three servings, one of which we split into four 150 calorie cups as left-overs. I think next time, I'm going to put the entire thing into cups to use as one of our lunch meals. Chipotle Chicken Cauliflower Bake. Broken into ¾" (2cm) florets. Chipotle peppers in adobo sauce.

Kickin' Into Keto: May 2012
http://www.ketoblog.net/2012_05_01_archive.html
Monday, May 7, 2012. A tangy twist to salmon. This whole meal was really fast, so will likely become a favorite. The salmon recipe was courtesy of snoregonwaits on Reddit. I made the salmon and put the packets in the refrigerator a few hours before I actually cooked them and the rest of the meal. I didn't have frozen artichokes on hand, but I had some brined in a can. We had a salad with this as well, so I used remaining artichokes and made a dressing so I didn't have to throw out the rest of it. Tonight...

Kickin' Into Keto: April 2012
http://www.ketoblog.net/2012_04_01_archive.html
Wednesday, April 11, 2012. Searching for things to freeze. Doug and I are super busy with work, but we are also PC gamers. Over the next month we have 3 new games coming out that have weekend betas. We've got burgers from our Mashed Meat Marathons. And we always have cooked chicken, salad mix and dressing on hand. But since we may have quite a few weekends of this over the next few months, I wanted some variety. Slow-Cooker Chicken Tomatillo Soup. Husks removed and halved horizontally. Return to crock-po...

Kickin' Into Keto: March 2012
http://www.ketoblog.net/2012_03_01_archive.html
Thursday, March 22, 2012. Spaghetti squash, spinach and fish gone wild. This is a recipe I kind of liked the look of, it seemed too mild and wasn't going to hit our macros, so I just ran wild with it. As always, you can find the original recipe on my PTE. When we took our first bite, we thought it was going to be kind of disgusting. It was a weird combo, busting out of the pan. but we absolute loved it! Had some for lunch the next day. It also reheats great, so Doug is taking the rest to work. For more i...

In the evening we have dinner together, which is always around 600 calories (and usually is known by me in advance, so I can plan my other macros around it). Late at night I might have one more cup (if I'm hungry and have the room in my daily calorie budget) and then I start all over again the next day.

Kickin' Into Keto: An early taste of summer
http://www.ketoblog.net/2013/02/an-early-taste-of-summer.html
Monday, February 25, 2013. An early taste of summer. Coming in at 510 calories, this meal actually did not quite meet our 600 calorie requirement for our 150 Keto Plan. Dinners. We went with it anyway, because I really wanted a dish with zucchini in it that wasn't crazy high in carbs. Broiled Italian Flatfish and Shrimp. Flatfish: flounder, halibut, sole, tilapia. Chopped into large pieces. Add the minced garlic, chopped tomato and basil. Continue cooking just until tomato begins to give up its juice...
