Figuring Out Flour | my Voice is in here somewhere...
https://madbaker.wordpress.com/2008/03/12/figuring-out-flour
My Voice is in here somewhere…. It’ll come to me, don’t worry. Laquo; Baking School is Over (sniff). Originally uploaded by romanlily. Since I got back from SFBI I’ve been trying to figure out what to do with my flour. Around the time I switched to organic unbleached flour back in November I’ve been struggling with pale loaves. We talked about this at school and I suspect that the organic flour might be the culprit. It all comes down to enzyme activity:. So my organic flour has a falling number that̵...

My Voice is in here somewhere…. It’ll come to me, don’t worry. Laquo; Learning about Whole Grains. Baking School is Over (sniff). Originally uploaded by madbaker66. What an amazing day at the SFBI Whole Grains course. We combined more soakers, preferments and levains than I can count to come up with five complex loaves. The flavours and textures were as varied as the seeds that went in them. Here’s what we made, from the back:. 8211; Prairie Bread. 8211; Two Castle Rye (#2 in both categories). Follow &ld...

My Voice is in here somewhere…. It’ll come to me, don’t worry. A Mass of Semolina Bread. Originally uploaded by madbaker66. Now that’s what a semolina loaf should look like. The formula is very similar to the bread we bake at the Orange Boot, and I got some pointers about shaping and applying sesame seeds which really helped. The bread was always tasty, but now it looks great too! This entry was posted on February 15, 2008 at 2:28 pm and is filed under Baking in San Francisco. From your own site.

My Voice is in here somewhere…. It’ll come to me, don’t worry. Artisan 2, Day 3. Time for new flours. February 14, 2008. Originally uploaded by madbaker66. Yesterday was the same flour, with different levains. Today was different flours with the same levain (for the most part.) It was a very challenging day since the doughs were especially tricky to work with. It’s complex, wheaty, with a strong rye overtone. This is a bread which I’d be proud to offer in my bakery once I practice the han...ONE QUICK NOT...

Hand-made brick oven bread in Regina, Saskatchewan. How Do I Order? January 29, 2008. Orange Boot Update: Time to Learn. Last Friday was exactly like the picture I had in my mind about baking in winter. Mild, mostly sunny, but with a delicate snowfall off and on throughout the day. Huge snowflakes piling up on my staging table that were easily swept off between loads. It was beautiful and relaxing – completely unlike the bitter cold, windy mess we have outside today. 8211; Artisan I. 8211; Artisan II.

Hand-made brick oven bread in Regina, Saskatchewan. How Do I Order? February 17, 2008. Happiness is Sourdough Bread. Hi everyone. It’s another report from the road as I wrap up my second week at the San Francisco Baking Institute. The Artisan II course is called “Mastering Sourdough” but we did so much more as well. One more week. Just one more week till I’m back home and firing the oven again. But first I need a crash course in whole grains and specialty flours with guest instructor Didier...Back Home, ...

The Antics of a Mad Baker Woman
Saturday, September 22, 2012. All the Little Muffin-Type Things. I've been making muffins and cupcakes lately. I don't know what it is about them that I like so much, but I can't deny that the endless variety in cupcake/muffin liners that are available nowadays does appeal to my whimsical side. We have a huge gallon jar of cupcake liners in our kitchen that we collect. I don't know if I will ever be able to use them all. This time I made apple-pumpkin muffins. The recipe is from here. You like, yes?
