Got to finally put my new mash tun to work by brewing a Belgian-style pale ale. I had mentioned the recipe in the past post, so check that out if you are interested in brewing something similar. This past Sunday I bottled my Citra Pale Ale. Really looking forward to this one. Smelled amazing and had great color. This is actually a spin-off, clone recipe of Saison Dupont. 6 lbs of Munton's extra light plain DME. 35 lbs Belgian pale 2-row. 8 oz Vienna malt. 1 lb Clear candy sugar. 14 oz Styrian Goldings 5.4 AA at 60 mins. 5 oz East Kent Goldings 5.0 AA at 15 mins. 25 oz East Kent Goldings 5.0 AA at 5 mins. 1 tsp Irish moss. 1/2 oz bitter orange peel at 15 mins. Wyeast 3724 Belgian Saison yeast. Sparge with 168 degree F water.

I placed an order today for a brand new 44 qt (11 gallon) stainless steel brew kettle! Pretty excited about this. I've currently been brewing on a standard 5 gallon brew pot. I figured that it was time to amp everything up. I'm also planning to build a mash tun in the next week or so. I'll post pictures once everything arrives. Boiling 5 gallons / Use 10 gallon brew kettle.

My dad loves Blackstone's Nut Brown Ale, so I am going to brew a beer very similar to it. I'll go ahead and post the recipes of the beers for those who are interested. Chocolate Stout (with Ancho Chiles). 90 minute boil - Mash at 150 F for 60 minutes - Sparge at 175 F. 12 lbs of 2-row Pale Malt. 1/2 lb Rolled Oats. 1/2 lb Crystal 120L. 1/2 lb Chocolate Malt. 4 oz Chocolate Malt.
