My mom and I went blueberry picking last week and needed a way to use up the huge bucket of blubes we brought home. Talk about fresh! Putting on my baking hat. I bake, therefore I am. Alice Medrich’s Cocoa Brownies. This is the best brownie I’ve ever made, and the only brownie recipe that I’ve kept. My brownies used to turn out cake-like, so I gave up on scratch brownies and decided that Betty Crocker pre-mix was the way to go. At least that was until these came along! I almost went crazy when I saw the thin, crisp sugar layer on top. After all the countless failed attempts, finally! Aww, what a happy birthday girl :. 2 large eggs, cold.

I warned my Dad that it wasn’t anywhere near healthy, but he polished off the entire slice for breakfast this morning. The durian flavour was very intense, but I personally would have liked it to be very, very, very intense haha! And check out the durian fibers! Putting on my baking hat. I bake, therefore I am. The muffins were simple, nothing fancy, but absolutely worth your calories. Second time I’m making them actually! The first time was slightly disastrous since I added the egg into the hot orange juice and it got slightly cooked. A little price to pay for my impatience, but they tasted good enough for a second try 🙂. Adapted from For the love of cooking. 2 cups of flour. 1/2 cup of sugar. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1 tbsp orange rind.

Putting on my baking hat. I bake, therefore I am. White choc cranberry oatmeal cookies. I had 5 of these for diner despite my cough, flu and impending fever. They were delightfully sweet, but it came from the cranberries and white chocolate. I love the way white chocolate complements all berries, a balance which neither milk nor dark chocolate can match up to. Or cake-like soft. If only I could make cookies like the ones sold at Subway.
