You can also used dried beans from your food storage if you plan ahead. The equivalent to a 15-ounce can is about 1 2/3 cups of beans. Just soak beans overnight, cook 1 cup of dried and measure out 1 2/3 cups. You will have a little extra. Black Beans and Rice. 3/4 cup uncooked white rice. 2 tablespoons lemon juice.

It's simple and a great way to use cauliflower. The recipe is adapted from peachtreecooking.blogspot.com. 1 medium onion, chopped. 1/2 tsp. salt. 1 1405 oz can of chicken broth. 1 1/2 cups water. 1 head (2.5 lbs) cauliflower, cut into 1 inch pieces. 1 tsp mustard (Dijon or regular). 1 cup shredded cheddar cheese.
