I used butternut squash instead of potato this time, so I think that makes it paleo if you’re into that. This time I made it with chicken thighs. You’ll need a pan that can go in the oven this time. October 17, 2014. October 22, 2014. An extremely simple dinner. Meat, starch, vegetable. This is an example of a very simple, well-rounded dinner that I cook all the time. You want to work the meal around the cook time for either your meat or your starch. In this case, I made beef and potatoes with kale. Since the potatoes will take longer than the beef, I start them first. If you use lean beef, you want to use something to grease the pan. Throw the beef in the pan as the potatoes start to soften....
