Slow roasted tomatoes with Fennel and Horseradish dressing. 1 kg ripe tomatoes. Good quality olive oil. 2-3 small bulbs fennel. Preheat the oven to 130C˚. Place the whole tomatoes on an oven tray. Brush lightly with oil. Sprinkle with salt, pepper and thyme. Bake for 30 – 45 minutes until just the tomatoes are just starting to wrinkle but are not soggy. Remove from the oven and cool on the tray. To serve, place the tomatoes on a platter, cut the fennel into small thin rings and place on top.

Ajo Blanco de Malaga - Chilled Almond and Garlic Soup with White Grapes. Serves 6-8 as part of tapas. 120g blanched almonds, finely ground. 50g fresh white breadcrumbs. 50mls extra virgin olive oil. 3-4 tablespoons sherry vinegar, or to taste. Frac12; cup seedless white grapes, halved. Put the garlic, almonds, breadcrumbs and oil into a food processor and puree to a smooth paste. Add the vinegar and water and process until frothy.
