Recipe of namak pare or Namkeen. 2 cups maida (all purpose flour/ refined flour). 2 tbsp oil for deep frying. 1 tsp ajwain (carom seeds). 1/4 tsp baking soda. 1 Mix maida, ajwain, salt and baking soda in a bowl. I try to replicate her method and get good comments when I make it. It’s simple and always yields satisfying results. Recipe of kadhi pakora. 2 cups sour curds (yogurt). 1/2 cup besan (gram flour). 1/4 tsp methi dana (fenugreek seeds). 1/4 tsp cumin seeds. A pinch of asafoetida. 3/4 tsp turmeric powder. 1/2 tsp red chilli powder. 1/2 inch piece ginger- grated.
