My brother-in-law and family are vegetarians and were coming down for the weekend a couple of years ago. I had a major glut of squash and needed some inspiration for an evening meal. A quick Google search and voila! I found the following recipe on the BBC website. It went down very well with my discerning visitors. 1 large butternut squash. 2 garlic cloves, peeled. About 15 sage leaves, chopped.
