Take a photo of everything you eat/ every table you sit at for the whole trip. Take a photo of yourself everyday. Take a picture in every place you visit of the following things (e.g. church, bicycle, traffic lights, monuments, walk signs, whatever you decide). I quite like the idea of taking a picture each day of road signs. Just an idea anyway.
