Oysters on the Half Shell Platter with Citrus Mignonette and cocktail sauce. Cedar Plank Salmon served with Orange Ginger Miso Sauce. Roasted Red Beets and grilled Delicate Squash rings.

I don't know what you do when you go camping, but when I am not hiking or swimming or stoking the campfire, I am cooking over it. I love to bring a cooler full off garden herbs and veggies, marinated meats, cheeses and seasonings to create comforting meals for my family and the lucky other campers I offer our left overs too. We also had Grilled Shrimp for dinner one night, but we ate that before I could get a photo!
