Tuesday, April 27, 2010. 1 onion, chopped - about 1 cup. 3 or 4 cups chicken broth. 1 potato, peeled and diced. 1 cup light cream or milk (I usually just use chicken broth and no milk). Cook fiddleheads in boiling salted water until just tender, then drain and reserve. Melt the butter in the pot you are making the soup in. Saute the onions until softened. I was thrilled with the discovery of a large, crisp nappa cabbage in our box this week as I’ve been itching to make this recipe. Any suggestions on what we could replace the “Mr. Noodle” noodles with would be welcome. I’m ashamed to admit I consumed far more than my share of these in my university days. There must be a better alternative out there! Despite all this, it really is super tasty!

Kale and Potato Au Gratin. 1 lg bunch kale, washed,ribbed and torn. 1 small onion sliced. 2 cloves garlic sliced or pressed. 2 T olive oil. 3 lg potatoes peeled, sliced 1/4" thick. 2 T butter sliced into pats. 1/2 c cheddar grated. Louise has been bunching radish and Gerald harvesting. Today we have the plumber here to get the sink hooked up in the new kitchen. I can not wait to be down there cooking, canning, freezing away food for the winter. It will be so nice to get it out of my own kitchen.last week we stewed 3 trays of sweet cherries.
