It was just what we needed after all this cold, gloomy weather. Good for warming up the body and soul. Pre-heat oven to 350. Take one butternut squash (approximately 2 pounds). Bake whole with skin on until tender to the touch. Put 3 tablespoons of butter into pot. Melt butter to white, foamy stage. Add sliced onions to pot. Cook until tender translucent.
