One of my favorite go-tos for an easy and nutritious vegan, gluten-free meal is dried red lentils (which are super-easy to cook! You can get them super-cheap at most health-food stores like Whole Foods or Sprouts. I think I got these for about $2 a pound. 1 1/2 cups of dried red lentils. 3 cloves garlic, minced.
