Monday, 15 October 2012. 芋头 - 去皮净重 200g. 奶油食油猪油 - (我用白油) 25g. 五香粉 - 1 4小匙. 胡椒粉 - 1 8小匙. 1 芋头洗净切小块，(芋头摸了会痒，所以先戴上手套或搽上白醋，又或者保持手部干爽, 可以避免)，切块了拿去蒸熟，尽量把芋头排好，不要重叠. 2 把蒸好的芋头块加入糖，盐，五香粉，胡椒粉，用叉压烂，或用搅拌机搅至粘烂. 3 碗里倒入澄面粉，加入热水，用筷子趁热快速搅拌均匀，很快就会拌好，加入搅拌好的芋头粘状，搅拌均匀，再加入白油，搅拌均匀，形成面团，放入冰箱20分钟. 4 20分钟后，面团温度降低了，比较不粘手，撒上一些玉米粉，稍微搓揉面团，把面团搓成长条状,再把两端粘起, 搓成圈形, 放入冰箱20分钟. 5 热锅放油，最好是可以盖过芋头圈，待油温高时才放芋头圈去炸，炸时可以一直翻转芋头圈，就会炸出比较均匀的金黄色，变可捞起. Wednesday, 26 September 2012. 蛋黄 egg yolk - 3个. 全蛋 egg - 1个. 细砂糖 granulated sugar - 50g. 凝胶粉 gelatin - 10g. 黑巧克力 dark chocolate - 300g. 淡奶油 whipping cream - 300g. 甜酒/兰酶酒 - RUM 30g. 1 把蛋黄，全蛋，细砂糖放进盆里，用打蛋器打至乳白色，再以隔水加热方式，搅拌蛋黄(杀菌作用) 要不停搅拌，不然就变蒸蛋了，拿起待放，降温. 2 凝胶粉加入适量冷水混合均匀，以隔水加热方式，让粉融化，拿起，待放. 3 以隔水加热方式搅拌巧克力块，搅拌至融化，加入酒，搅拌均匀，若在这时巧克力开始凝固，可以加适量水，搅拌均匀，拿起，待放，降温. 4 盆里放入从冰箱取出的淡奶油，用打蛋器旋转拌打不到10秒，淡奶油彭起有一点纹路了就停止搅拌，既是6分发. Wednesday, 26 September 2012. 香兰层蛋糕 Pandan layer cake （天然色素）. 香兰层蛋糕 Pandan layer cake食谱. 蛋黄 egg yolk - 4个. 沙拉油或植物油 vege oil - 50g. 香兰汁 pandan juice -30g. 椰桨 santan - 30g. 低筋面粉 low-gluten flour - 90g. 细砂糖 granulated sugar - 20g. 蛋白 egg white - 4个. 柠檬汁 lemon juice - 5滴. 细砂糖 granulated sugar - 60g. 1 香兰叶洗净，剪短，放入搅拌机里，加入少许水，搅烂，用布筛过滤，挤出30g香兰汁，加入30g椰浆，混合均匀. 4 把糊倒入模型盘内，稍微震动盘子，轻拍盘底，以震出气泡. 6 把烤出的蛋糕摇晃两下，倒扣盘子待凉，之后刮一刮边缘，即可脱模. 糖 sugar - 80g. 椰桨 santan - 500ml.
