Yesterday, most things were closed down due to snow but, unfortunately, the snow melted by noon. To me, snow days means baking days. I had some extra bananas sitting around and figured it had been a long time since I had made banana bread. 2 Cups Bob's Red Mills gluten free all purpose baking flour. 2 Teaspoons baking powder. 2 Teaspoons baking soda. 1 Teaspoon xanthan gum. 2/3 Cup agave nectar.

Friday, July 27, 2012. Got this recipe from a friend in our Sunday school class. I cannot take credit for its awesomeness. But this is great as a pico to go on tacos/fajitas/taco salad OR just as a dip with tortilla chips. I could eat the entire bowl myself! Can white shoe peg corn (drained and rinsed). Can black beans (drained and rinsed). Can petite diced tomatoes (drained and rinsed). Can of rotel (with juice). Half a red onion, diced. Bunch of green onion, diced. 6 tbsp of fresh squeezed lime juice.

Friday, November 4, 2011. Different Chicken Taco Salad. So I made what we had today :) You know it's one of those days. I had chips, I had some boneless chicken breast that needed to be cooked. I had some frozen brocolli and had some cream of mushroom soup. I fried the chicken after cutting it into strips and seasoned it with some seasoned salt and chili powder. I cut up some lettuce and tomatoes and added some chips to the whole "mess". Even my 4 year old daughter ate it up with the brocolli and all.
