But this is great as a pico to go on tacos/fajitas/taco salad OR just as a dip with tortilla chips. I could eat the entire bowl myself! Can white shoe peg corn (drained and rinsed). Can black beans (drained and rinsed). Can petite diced tomatoes (drained and rinsed). Can of rotel (with juice). Half a red onion, diced. Bunch of green onion, diced. 6 tbsp of fresh squeezed lime juice.

Cooking spray for sauteeing. 2-3 large boneless, skinless chicken breasts, cut in bite sized pieces. Salt and pepper to taste. 1 teaspoon garlic powder. 1/2 cup cilantro lime pesto (recipe follows). Flour or corn tortillas. Preferred taco garnishes (salsa, sour cream, cheese, etc). 2 1/2 tablespoons extra virgin olive oil.

Thursday, July 22, 2010. No idea if anyone checks this anymore! Hopefully some have it on their google reader. This recipe is a WINNER. My MIL gave it to me and we took it to our small group 4th of July cookout as a side with burgers. But I think it would be even better at like Thanksgiving or something. SO easy and YUMMY. I had to give out the recipe to everyone there! 1 can creamed corn. 1 can corn (drained). 1 small box cornbread mix (I recommend sweet cornbread). 8 oz sour cream. 1 stick melted butter.

Thursday, August 23, 2007. 2 cups corn kernels (thawed-out frozen corn). 1/3 cup chopped red onion. 1/4 cup chopped red bell pepper. 3 tablespoons chopped fresh cilantro. 2 tablespoons fresh lime juice. 1 to 2 tablespoons finely chopped jalapeno pepper (seeded). Combine all ingredients and serve. I think it tastes best when it’s a little cold, or room temperature, but not heated. If you've ever had the corn salsa at Chipotle. I grill chicken and/or steak, or I buy pre. Seasoned fajita meat from Wal.

Thursday, July 26, 2007. He doesn't remember anything but it looks as if he rode his bike about a block away to get fresh cantaloupe. And had some kind of crash on the way back. It also looks like somebody must of brought him home and put his bike in the garage for him because otherwise he would have had to carry the bike (because of it's condition) and the cantaloupe. Friday, December 25, 2009. Happy Halloween (on Christmas)! Gibson was a cowboy this year. Six shooters, spurs and cowboy hat. He was SO excited! Little man was only a couple of weeks old so he dressed up as a skeleton. (Thanks to a $3 onesie from Walmart.) You can't see his costume here but this was about as excited as he got this halloween. Friday, November 4, 2011. Different Chicken Taco Salad. So I made what we had today :) You know it's one of those days. I had chips, I had some boneless chicken breast that needed to be cooked. I had some frozen brocolli and had some cream of mushroom soup. I fried the chicken after cutting it into strips and seasoned it with some seasoned salt and chili powder. I cut up some lettuce and tomatoes and added some chips to the whole "mess". Even my 4 year old daughter ate it up with the brocolli and all.
